Easy Labor Day Entertaining

Labor Day - well, it's always held on the first Monday in September to honor the American Worker, but I feel like the holiday has become a way to mark the end of the summer season and the start of the school year. The best part is barbecues, time spent with family and well the day off!

Even though it has been almost 28 years now, each September I am reminded of a labor day weekend where my contractions were heavy and I thought for sure I would be having a baby... Well he came, but days later. This year is no different. I will be buying items to barbecue and getting the ingredients of my sons favorite cake. 

This year it is starting to cool off just enough in the mornings to leave the doors open for a bit and here the hummingbirds buzzing outside wile I make school lunches. Yep, still in that faze of life. That is what happens when you have kids sixteen years apart. Ok yes chuckle, but it's becoming quite popular thing these days to have bigs and littles. LOL!!! Anyway, it's still warm enough in the afternoons to feel like summer and well while watermelons are still sweet for a little while longer, I will be grabbing one of those as well.. This labor day I will be making some watermelon pizza's to snack on and rosemary lemonade to sip on while the main course is smoking on the barbecue. Hope you have some fun time planned with your loved one's this Monday. Below is the recipe I use... 


RECIPE: Watermelon Pizza

Ingredients

  • 1 watermelon

  • 1 cup coconut greek yogurt (Trader Joes)

  • ½ cup strawberries, sliced in half

  • ½ cup raspberries

  • ½ cup kiwi fruit peeled and sliced

  • ½ cup blueberries

  • ½ cup pomegranate seeds

Instructions

  1. Using a sharp knife, cut off a slice of watermelon right down the middle, about 2-3 inches thick.

  2. Using a spatula, spread an even layer of your yogurt around the watermelon leaving a bit of empty space at the top. (where your "pizza crust" is.)

  3. Layer your fresh fruit on top as you please. You can add as little or as many toppings as you like!

 


RECIPE: Simple Rosemary Lemonade

For the Lemonade I just used 2 bottles of the Santa Cruz organic from Vons and I infused them the night before with some Rosemary sprigs. Makes a great twist… Flowers are from Vons and we just alternated colors in a box! You know me, I will have to have some festive flowers around.
